Lemon Scones with Homemade Buttermilk
Oh hey. Yeah, that's me — still riding the Italy high, baking my way back to the land of lemons one recipe at a time. Episode 3 of the Lemon Series, and this one's for the scone people.
Two things make these worth making. First, my mini sifter from Sur La Table — I use it for everything from flour to cocoa to confectioners' sugar, and it earns its keep every single time. Second, my lemon scones are made with my homemade buttermilk. Skim milk (yes, skim!), a splash of vinegar, five minutes to curdle — it's the cat's meow, and you will not miss the cream. I use King Arthur flour, obviously, because there's no substitute.
Zest goes straight into the sugar for this one — rub it in with your fingers until it's fragrant, then work it into the dough. Cold butter, a gentle hand, and a lemon glaze poured over warm scones to finish. Soft center, crisp edge, very proper — right up until the first bite.
Squeeze the day.
