FIT Peanut Butter Raisin Oat Granola Bars — A Homemade Granola Bar Recipe from Frosting Bakeshop
Some recipes start in a bakeshop and never leave the house. This is one of them.
After about a year into my former Frosting Bakeshop, I wanted to create something for the health conscious among our regulars — the ones who wanted something wholesome alongside their morning coffee. Not a cupcake. Not a slice of cake. Something real, protein packed and genuinely good for you.
So I created our FIT line — a small but mighty menu of wholesome offerings that included three flavors of granola bars, a low-fat bran muffin, and homemade granola served on top of low-fat yogurt. It was simple. It was clean. And it resonated.
So much so that we launched a weekend morning Run Club around it — and before I knew it, NBC Washington came calling to feature our little FIT line and our Chevy Chase Run Club on air. Still one of my proudest Frosting moments.
Fast forward to today — I'm a SAHM in a custom lax hat and Brooks' practice jersey, making these bars for our last lacrosse tourney weekend of the season. Because real fuel never goes out of style.
This peanut butter raisin oat granola bar is as clean and simple as it gets. Natural peanut butter, honey, oats, raisins, cinnamon — and always, always double the vanilla. No refined sugar. No junk. No cap.
FIT Peanut Butter & Raisin Granola Bar
Yield: 14 granola bars
Natural peanut butter | 32 | ounces |
Honey | 24 | ounces |
Vanilla extract | 4 | teaspoons |
Oats | 25 | ounces |
Raisins | 16.5 | ounces |
Cinnamon | 1 | Tablespoon |
Melt peanut butter and honey (can substitute with brown rice syrup). Remove from heat and stir in vanilla extract (and this has been doubled). In a separate bowl, combine oats, raisins and cinnamon. Pour peanut butter mixture over dry ingredients and stir until completely incorporated.
Line the baking sheet (Sur la Table is my fave) with parchment paper and pour the mixture into the pan. Press firmly into the pan and chill in the refrigerator overnight. Cut into 14 equal bars.
A few notes before you bake:
Honey substitute: Brown rice syrup is an excellent plant-based swap for honey — same consistency, same sweetness, works beautifully in this recipe!!
Oat swap: Try replacing half the oats with organic crispy rice for a lighter, crunchier texture — SO good!!
Optional upgrades:
Semi-sweet chocolate chips — Brooks' personal favorite and highly recommended
Flax seeds + chia seeds — nutrient dense additions that boost fiber, protein and omega-3 fatty acids without changing the flavor!!
Brooks approved. No notes.
